Cut the broccoli into florets. Soak them in salted water for a few minutes to get rid of any bugs, then rinse well.

Beat the eggs with a pinch of salt. Keep them simple—you don't need to overcomplicate this.

Heat a wok or pan over medium-high heat, add a bit of oil, then scramble the eggs. Cook them until they're just set but still soft—don't overcook them. Remove and set aside.
